i have been making mac and cheese my mom's way from scratch for 26 years.

pasta 12 oz package large elbow or ziti boiled and drained

2-3 cups grated cheddar cheese add a little mozzarella or grated parmesan

skim milk 1/2- 3/4 cup
TBSP. cornstarch
TBSP margarine or butter

boil pasta drain ~ grate cheese set aside. using pan that pasta boiled in, melt margarine on low ~add cornstarch mix well add skim milk stirring until thickened. Add pasta and stir to coat with white sauce..add salt and pepper if desired now. Using large casserole pour 1/2 pasta cover with 1/2 cheese repeat. If you like, it can be microwaved or baked in a 350 oven covered or even frozen for later use. Add Green salad or at least spinich, tomato slices with red sweet pepper ! Ultimate comfort food in our home!! Easy vegetarian.
